If ever it were actually possible to have ‘summer in a glass’, then we feel sure that it would taste not entirely unlike this. (and we don’t mean damp, miserable summer either.).Emile Heredia is our kind of guy – and not just because he saw fit to make a wine such as this. He works completely organically, in vineyards which are home to older vines and does things as naturally and traditionally as possible in the winery. In the case of this wine, this means harvesting only perfectly ripe, healthy grapes (so he does not have to use any sulphur), starting the fermentation in vat and finishing it in bottle. Not a wine to stand on ceremony with, rather one to drink with gusto.
