The whole subject of food and wine matching is quite contentious, the wine world split between those who believe that you should just get on with things and that it is not of vital importance and those who spend their lives looking for the absolutely made in heaven match for any given dish.
We fall somewhere in between the two extremes. While we do believe that the right wine with the right dish is a wonderful thing, the combination becoming even more delicious than the sum of it's respectively delicious parts, we also believe that it is more important for you to find a wine which you truly love to drink. No matter how good a match, if the wine component is just not your thing, you will not be very happy with the situation and the whole point of wine with food is that everybody should be as happy and relaxed as possible.
Things can get awfully complex and complicated when it comes to matching wine with food and the subject is too vast to cover here, but these are a few general guidelines. If you are really interested, you could get a group together and do a Food and Wine tasting session with us.
